Mitch’s career in the hospitality industry spans over three decades, marked by steady advancement and a passion for developing others. He began his journey at The Mill, a well-known Iowa City pub, where he worked his way up from dishwasher to kitchen manager. This early experience instilled in him the value of hard work and teamwork, laying the foundation for his future success.
After several years at The Mill, Mitch’s professional path accelerated when he joined The State Room, an award-winning fine dining establishment affiliated with the University of Iowa. As Sous Chef, he contributed to the restaurant’s receipt of the local “Best Fine Dining” award three years in a row and helped introduce a seasonal tasting. These achievements highlighted his commitment to culinary excellence and innovative thinking.
Building on his success, Mitch transitioned into the University of Iowa’s Food Service catering division, where he managed culinary operations across five outlets. First serving as Sous Chef and then Head Chef, he led a team responsible for executing hundreds of events annually, ranging from large university banquets to intimate faculty gatherings. His organizational skills and attention to detail earned him recognition within the university community.
In 2001, Mitch returned to the private sector, taking on the role of opening Sous Chef for Biaggi’s Ristorante Italiano in Cedar Rapids. Mitch assisted in aggressive multi-unit growth for 2 years before taking the role of Chef Partner in 2003 and opening his own Biaggi’s store in North Carolina and continuing to drive growth and operational excellence.
Believing that a chef’s true legacy is the development of those around him, in 2012 Mitch became an Instructor at The Chef’s Academy, a nationally accredited college for culinary and pastry arts. Mitch’s teaching philosophy centers on fostering curiosity, resilience, and leadership.
When The Chef’s Academy closed in 2018, Mitch saw an opportunity to bridge the gap between talented professionals and exceptional employers. He opened the Raleigh office of EHS Recruiting Company, later expanding his reach by assuming ownership of the Northern Virginia market. His efforts have helped countless hospitality workers find fulfilling careers and aided businesses in building high-performing teams.
Today, whether he’s connecting with candidates, crafting dishes in the kitchen, or enjoying time with his dogs, Mitch remains dedicated to his craft. On weekends, he can be found at the Chef’s Table at the Downtown Cary Farmers Market, sharing his expertise and love for food with the local community—continuing a lifelong commitment to hospitality leadership and mentorship.
