Having over 30 years’ experience in multiple facets of the hospitality industry, Mitch rose in the ranks from dishwasher to kitchen manager at The Mill, a local Iowa City landmark pub. His professional career took off at The State Room, an award-winning fine dining restaurant affiliated with the University of Iowa where he served as Sous. Advancing into the University of Iowa’s Food Service catering division he managed multi-outlet operations on the culinary side, first as Sous and then Head Chef. Returning to the private sector as opening Sous for Biaggi’s Ristorante Italiano in Cedar Rapids. Mitch assisted in aggressive multi-unit growth for 2 years before taking the role of Chef Partner in 2003 and opening his own store in North Carolina. Firmly believing a chef’s job is to assist the education of the staff around him he became an Instructor at The Chef’s Academy, a nationally accredited college of culinary and pastry arts.
When he is not in the kitchen he can be found hiking the trails of NC, or manning the Chef’s Table at the local farmer’s market.|
